What You Need for the Fish:

    • 1 x Yellowtail (make sure it’s scaled and cleaned)
    • 1 x Handful of fresh coriander
    • 2 x Limes (cut into slices)
    • 1 x Lemon (cut into slices)
    • Salt and pepper to taste

What You Need for the Sauce:

  • 1 x Tablespoon of olive oil
  • ½ x Cup of soy sauce
  • 3 x Tablespoons of honey
  • 2 x Crushed garlic cloves
  • 1 x Tablespoon of ginger
  • 1 x Tablespoon of lemon juice
  • 1 x Red chilli chopped finely

What to Do:

● In a large bowl, combine all the sauce ingredients
● Place the Yellowtail on a greased baking pan
● Using a sharp knife, score both sides of the fish in two places and coat the fish inside and outside with the sauce
● Push the lemon slices into the scored sections of the fish and then dump the rest of the sauce over the top of the fish
● Season the fish with salt and pepper and pop the tray into the oven, which you have preheated to 200 degrees Celsius – this should bake for 25 to 30 minutes

Pan Seared Yellowtail

Pan seared Yellowtail is also popular and takes much quicker than the baked variety. For the elegant dinner serving – okay, who are we kidding – this one goes great with chips and salad!

What You Need:

● 1 x Yellowtail
● ½ x Teaspoon of salt and pepper
● 4 x Tablespoons of olive oil
● ½ x Cup of Almond flour
● 1 x Teaspoon of garlic powder
● 2 x Tablespoons of unsalted butter
● 2 x Lemons

● Rinse off the fish with cold water and pat it dry with paper towels
● Using a plate, combine the salt, pepper, garlic powder and almond flour
● Spread the flour across the plate and turn the fish into it, so that all sides are coated well in the flour – shake the fish gently so extra flour drops off
