Ingredients needed for peppermint crisp tart cupcakes

For the cupcakes:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/4 cup hot water
  • 1/4 tsp peppermint extract

For the Peppermint Crisp frosting:

  • 1 cup heavy whipping cream
  • 1/4 cup sweetened condensed milk
  • 1/2 tsp peppermint extract
  • 100g South African Peppermint Crisp, finely chopped

For the garnish:

  • Additional crumbled Peppermint Crisp chocolate
  • Fresh mint leaves (optional)

Instructions:

Step 1: Bake the Cupcakes

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until creamy and fluffy.
  4. Add the eggs one at a time, mixing thoroughly after each. Stir in the vanilla and peppermint extracts.
  5. Gradually mix the dry ingredients into the wet ingredients, alternating with buttermilk. Start and finish with the dry mixture.
  6. Mix in the hot water to thin the batter slightly and ensure moist cupcakes.
  7. Pour the batter into the liners, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Let the cupcakes cool completely before frosting.

  1. Place your mixing bowl and beaters in the fridge for 15 minutes to chill. This helps the cream whip faster.
  2. Pour the cold heavy cream into the chilled bowl and whip on high speed until soft peaks form.
  3. Slowly add the sweetened condensed milk and peppermint extract, mixing until well combined.
  4. Gently fold in finely chopped Peppermint Crisp chocolate with a spatula.
