  • 2 cups of warm water

What to do:

  1. In a large mixing bowl, combine the dry ingredients: all-purpose flour, salt, instant yeast, and sugar.
  2. Whisk the dry ingredients together until well incorporated.
  3. Add a tablespoon of oil to the bowl with the dry ingredients and mix well.
  4. Slowly pour warm water into the bowl, stirring continuously to form a thick batter.
  5. Cover the bowl with a clean kitchen towel and let it rise for approximately an hour until the dough doubles in size
  6. Gently mix the batter and allow it to rest for another 10 minutes.
  7. In a large pot, heat vegetable oil over medium heat for deep frying.
  8. To test if the oil is hot enough, drop a small amount of the batter into the oil. If it sizzles, it is ready for frying.
  9. Using a spoon or ice cream scoop, drop dollops of the batter into the hot oil and fry until golden brown on both sides.
  10. Once cooked, remove the fritters from the oil using a slotted spoon and place them on a paper towel to absorb any excess oil.
  11. Serve the fat cakes warm with your choice of dipping sauce or topping, and enjoy!
