Once upon a time, way back in the day – and we mean way back in the day when farmhouses were the norm and having a respected “lady of the house” was just the traditional way, there existed a way of cooking up a pudding from scratch. Imagine the pressure of creating a delectable pudding to delight the palates of the entire family with nothing but “what you have.” It’s believed that’s why a series of not-all-that-glamorous-but-oh-so-tasty puddings hit the South African scene.
Puddings made from the basics such as flour, butter, sugar, eggs, and some sort of jam became the go-to for housewives seeking a quick pudding for the family. These puddings include the likes of Malva pudding and Jan Ellis pudding. And among the various versions of these puddings, out came the delightful bruinpoeding.
Typical South African celebrations, braais, and festive periods are accented with traditional desserts such as bruinpoeding. Just because you’ve moved to greener pastures or landed on distant shores, it doesn’t mean you have to miss out on the familiar and comforting tastes of home. You can whip up your own batch!
Your typical bruinpoeding recipe isn’t hard to follow, and in fact, you’ll be quite impressed with how such an affordable (and we mean cheap) pudding can taste so exceptional. It’s moreish in every sense of the word. All you’ll need is a stash of eggs, sugar, jam, all-purpose flour, baking powder, baking soda, vinegar, milk, and a little pinch of salt!

Nothing’s easier to make than bruin poeding. But if you’ve never made it before, you may need a little guidance as follows.
What You Need:
- 4 x eggs
- 2 x cups of white sugar
- 2 x tablespoons of apricot jam
- 2 x cups of all-purpose flour
- 2 x teaspoons of baking powder
- 2 x teaspoons of baking soda
- 3 x tablespoons of vinegar
- 2 x cups of milk
- Pinch of salt
For the Sauce:
- 1 x cup of water
- 2 x cups of milk
- 1 x cup of white sugar
- ½ cup butter/marge
- 2 x teaspoons vanilla
What to Do:
- First, preheat the oven to 180 degrees Celsius.
- In a mixing bowl, use a wooden spoon to cream the eggs and sugar together. When properly creamed, the mixture will become a creamy paste.
- Then, add the apricot jam, flour, baking powder, baking soda, vinegar, and salt. Do not add the milk at this point.
- Once everything is well mixed, you can slowly add the milk, mixing gently.
- Ensure that the mixture has no lumps or dry mixture, and then pour it into a greased baking dish.
- Pop the baking dish into the oven and allow it to bake for 60 to 70 minutes. When the sponge pudding is ready, it will be dry or slightly moist but not wet inside. You can check this by poking a wooden skewer or knife into the sponge, which should come out dry.
- Next, it’s time to tackle making the sweet sauce. You’ll need to use a saucepan to mix the water, milk, white sugar, butter, and vanilla over medium heat.
- Bring the mixture to a boil and then remove from the heat.
- Remove the sponge cake from the oven, and poke several holes into the top using a knife, toothpick, or skewer.
- While the sauce is still warm, slowly pour it over the sponge pudding. Do this slowly and in stages to ensure the sponge has time to soak up the sauce.
- Allow the bruinpoeding to settle and then serve. Prepare for your guests (if you’re willing to share) to want more.
Most people serve bruinpoedding with ice cream or whipped cream. It’s also enjoyed plain, just as it is. You can add it to a bowl of fresh fruit and custard to try something different.
