What You Need:

  • 4 x eggs
  • 2 x cups of white sugar
  • 2 x tablespoons of apricot jam

  • 2 x teaspoons of baking powder
  • 2 x teaspoons of baking soda
  • 3 x tablespoons of vinegar
  • 2 x cups of milk
  • Pinch of salt

For the Sauce:

  • 1 x cup of water
  • 2 x cups of milk
  • 1 x cup of white sugar
  • ½ cup butter/marge
  • 2 x teaspoons vanilla

What to Do:

  • First, preheat the oven to 180 degrees Celsius.
  • In a mixing bowl, use a wooden spoon to cream the eggs and sugar together. When properly creamed, the mixture will become a creamy paste.
  • Then, add the apricot jam, flour, baking powder, baking soda, vinegar, and salt. Do not add the milk at this point.
  • Once everything is well mixed, you can slowly add the milk, mixing gently.
  • Ensure that the mixture has no lumps or dry mixture, and then pour it into a greased baking dish.
  • Pop the baking dish into the oven and allow it to bake for 60 to 70 minutes. When the sponge pudding is ready, it will be dry or slightly moist but not wet inside. You can check this by poking a wooden skewer or knife into the sponge, which should come out dry.
  • Next, it’s time to tackle making the sweet sauce. You’ll need to use a saucepan to mix the water, milk, white sugar, butter, and vanilla over medium heat.
  • Bring the mixture to a boil and then remove from the heat.
  • Remove the sponge cake from the oven, and poke several holes into the top using a knife, toothpick, or skewer.
  • While the sauce is still warm, slowly pour it over the sponge pudding. Do this slowly and in stages to ensure the sponge has time to soak up the sauce.
  • Allow the bruinpoeding to settle and then serve. Prepare for your guests (if you’re willing to share) to want more.
