This is the section we all love. There are many Cape Herb and Spice recipes filled with mouth-watering ingredients. However, today, we will look at one that will hopefully inspire you to start sprinkling these spices on your lekker kos today! Let’s dive into a dish with a Mediterranean twist!

What you need

Gather the following ingredients:

  • Cape Herb & Spice (Mediterranean Roast)
  • 6-8 large chicken thighs
  • 1 whole garlic head
  • ½ fresh ciabatta loaf
  • 1 red pepper sliced
  • 1 yellow pepper sliced
  • 3 small red onions cut into quarters
  • 250 g cherry tomatoes
  • 200 g black olives (pitted)
  • Olive oil for basting
  • 3.5 tablespoons of red wine vinegar
  • 100 g Feta cheese for serving

What to do

Follow these super easy instructions for an exotic one-dish Mediterranean meal!

  • Set the oven to 180 degrees Celsius (fan oven) or gas mark 4
  • First, place the chicken and all of the other ingredients, except for the feta cheese and Mediterranean spice, onto a large oven tray. How easy was that?
  • Using the Mediterranean Roast spice, season the ingredients thoroughly.
  • This is the tricky bit! Using clean hands, mix the ingredients on the tray, ensuring the oil, vinegar, and spices coat the chicken and vegetables.
  •  Allow the ingredients to rest for five minutes so the meat can absorb the spice flavours. Note for a more robust flavour, allow the meat to marinate in the spices overnight.
  • Place the tray in the oven and bake for 45 minutes. When the dish is cooked, the vegetables should be slightly charred and the chicken golden brown.
  • Garnish with the feta cheese and serve with fresh, crispy Ceasar salad and new potatoes.
