How to make steak Sosaties

This beef Sosaties recipe is incredibly straightforward. You can prepare the skewers a day or two in advance and keep them refrigerated, making it perfect for easy entertaining.

  1. Prepare the skewers: Soak the wooden sosatie sticks in water for at least 15 minutes. This prevents them from burning on the grill.
  2. Make the spice rub: In a small bowl, mix together all the ingredients for the rub: brown sugar, instant coffee, paprika, garlic salt, coarse salt, chilli powder, and black pepper.
  3. Prep the meat and veggies: Cut the steak into 1-inch (2.5 cm) cubes. In a large bowl, toss the beef cubes with the spice rub until they are evenly coated. Chop the peppers and red onion into 1-inch chunks, similar in size to the meat.
  4. Assemble the sosaties: Thread the marinated meat and vegetables onto the sosatie skewers. Alternate between the steak, peppers, onion, and cherry tomatoes to create a colourful pattern.
  5. Refrigerate (optional): For the best flavour, cover the Sosaties and refrigerate them overnight. If you’re short on time, even an hour will help the flavours to meld.
  6. Grill to perfection: Before cooking, bring the Sosaties to room temperature. Preheat your grill or braai to a medium-low heat (around 120°C / 250°F). Place the steak Sosaties on the grill and cook for about 15 minutes, turning them every 5 minutes to ensure they cook evenly on all sides.
  7. Rest and serve: Once cooked, remove the Sosaties from the heat and let them rest for 5 minutes. This allows the juices in the steak to redistribute, resulting in more tender meat. Serve immediately.
