South African rusks are a beloved treat, enjoyed alongside a steaming cup of tea or coffee. These dunkable delights are a staple that combines tradition with comfort. While many people know about traditional south African rusk recipes, few are familiar with the idea of combining rusks with the rich, syrupy flavour profile of south African koeksisters. This recipe does just that by taking inspiration from the sweetness and spice of the koeksisters recipes while preserving the hearty and satisfying texture of rusks.

A closer look at Koeksisters and traditional Rusks

Before heading into the kitchen, it’s helpful to understand the origins of these iconic South African treats. Koeksisters are braided pastries soaked in syrup, offering a sweet, sticky flavour with hints of spice. They trace their origins to Cape Malay cuisine, which combines Eastern spices with Dutch influences to create this plaited, syrupy dessert.

Rusks, on the other hand, are twice-baked, biscuit-like snacks that are ideal for dunking and have become a beloved staple in South African food culture. They originated from the traditions of early Dutch settlers, who created them as a way to preserve bread during long journeys across the South African landscape. Both treats are deeply rooted in South Africa’s culinary heritage, bringing a sense of tradition and comfort.

By merging the flavour notes of koeksisters with the texture of rusks, this recipe offers a unique spin on two traditional favourites.

Ingredients for Koeksister-inspired Rusks

For the Rusk base:

  • 4 cups (500g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120g) unsalted butter, softened
  • 1/3 cup (80g) granulated sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

For the Syrup coating (Koeksister touch):

  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom or cinnamon (optional)

Optional add-ins:

  • 1/3 cup shredded unsweetened coconut
  • 1/4 cup finely chopped pecans or almonds

How to make these Koeksister-inspired Rusks

Step 1. Preheat and prepare
Start by preheating your oven to 350°F (180°C) and lining a baking tray with parchment paper. This prevents sticking and ensures an even bake.

Step 2. Mix the dry ingredients
Sift together the all-purpose flour, baking powder, salt, cinnamon, and ginger into a large mixing bowl. These spices echo the warm flavours found in the koeksisters recipe.

Step 3. Incorporate the wet ingredients
Cream the butter and sugar in a separate bowl until light and fluffy. Beat in the eggs one at a time, ensuring they are fully incorporated, then mix in the buttermilk for a creamy consistency. Gradually fold the wet mixture into the dry ingredients, forming a soft dough. If you’re adding nuts or coconut, now’s the time to mix them in.

Step 4. First bake
Roll out the dough and transfer dough to the baking tray. Bake the dough at 350°F (180°C) for 25–30 minutes, or until they’re golden brown and firm to the touch. Remove from the oven and allow to cool completely before slicing into smaller, dunkable portions.

Step 5. Second bake (drying out)
Reduce the oven temperature to 250°F (120°C). Transfer the cut rusks onto a drying rack or a parchment-lined tray. Bake for an additional 30–40 minutes, or until fully dried, turning them halfway through. This step achieves their classic crisp texture.

Step 6. Prepare the syrup
While your rusks are drying, prepare the syrup by combining sugar, water, vanilla, and cardamom in a saucepan. Simmer on low heat until the sugar dissolves and the mixture thickens slightly. Allow to cool to room temperature.

Step 7. Glaze the rusks
Once the rusks have cooled, quickly dip them into the syrup, coating all sides. Place them back on the parchment-lined tray and allow to dry completely. This step adds a delicious sweetness and shine to the rusks.

Step 8. Enjoy!
Your homemade South African buttermilk rusks are now ready to enjoy with your favorite cup of coffee or tea. Store them in an airtight container for up to two weeks.

A sweet twist on South African rusks

These koeksister-inspired rusks bring together the comforting crunch of a South African classic with the spiced sweetness of a beloved treat. Whether enjoyed with a morning cup of coffee or shared around a table with friends, they offer a nostalgic taste of home with a unique twist. Bake a batch, dry them out slowly, and savour a little bit of heritage in every bite.
