Traditional South African sago pudding recipe with a twist!

For those who may be unfamiliar, sago pudding is a classic South African dish that is made with sago pearls. Sago pearls are small, white starch balls that are extracted from the pith of the sago palm tree. This ingredient has been used in cooking for centuries and is commonly found in many Asian and African cuisines. In South Africa, sago pudding is often served as a comforting dessert on cold winter nights.

The Twist – Baked Lemon Sago Pudding Recipe

Our twist on this traditional baked sago pudding dish involves adding the zesty flavour of lemon to create a refreshing and light dessert that can be enjoyed all year round. Here’s what you will need:

What you need:

  • 100 grams of Sago.
  • 600ml of full cream milk is the optimal choice for this recipe.
  • 30 grams of brown sugar.
  • Zest from a single lemon, grated
  • Nutmeg, grated and ready for baking.
  • 1 teaspoon of Vanilla essence.

What to do:

On the stove:

  1. Bring 2 cups of milk to just below boiling point in a saucepan.
  2. Sprinkle 1/2 cup of sago over the milk and stir it in.
  3. Bring the milk to a boil, stirring constantly.
  4. Reduce the heat, then add 1/4 cup of sugar, 1 teaspoon of vanilla essence and 1 teaspoon of lemon rind.
  5. Simmer for 15 minutes, stirring occasionally to prevent the sago from sticking.
  6. Once the sago is clear and the pudding has thickened, remove it from heat and pour it into a serving bowl.
  7. Serve immediately while still warm.

In the oven:

  1. Follow steps 1-4 above, but only boil for 5 minutes.
  2. Grease an oven-proof dish and pour the sago mixture into it.
  3. Sprinkle ground nutmeg or cinnamon on top, depending on your preference.
  4. Preheat oven to 160°C (320°F).
  5. Bake the sago pudding for 20-30 minutes, until the top is golden and caramelized and the sago is cooked through
  6. Remove from oven and let it cool for a few minutes before serving.
