Vegan versions include corn starch and flour instead of egg.
Believe it or not, custard is not a traditional South African treat. In fact, the concept and origin of this delicious mixture has long since been part of European cuisine. Growing up in South Africa, you probably sank your teeth into many desserts that featured Ultramel custard. Here are a few recipes for you to try at home…
Ultramel Lemon Meringue
If you are looking for a yummy treat with a bit of zing, a classic Ultramel lemon meringue recipe is for you. The recipe is below.
What you need:
- 250ml of Ultramel custard
- 385g of condensed milk
- 75ml of melted butter
- 8 digestive biscuits (crushed)
- 3 egg yolks and 3 eggs white (separated)
- 1 large lemon
- 60ml of castor sugar
What to do:
- Preheat the oven to 160 degrees Celsius.
- Spend some time mixing the crushed biscuits and melted butter together and once the biscuits are soaked through with the butter, press the mixture into a serving dish.
- Pour the Ultramel, condensed milk, egg yolks, and lemon juice in a saucepan and heat it while stirring continuously. Keep stirring until the custard is thickened.
- Once the custard is thick, pour it into the biscuit base and set it to one side.
- Now, whip the egg whites into soft peaks while adding the castor sugar one spoon at a time.
- Spoon the egg white peaks onto the custard mixture and pop it into the oven until the meringue topping is browning and firm.

Utramel Custard Fridge Cheese Cake
Like a smooth, creamy cheesecake after a meal or with your afternoon tea? Why not make an Ultramel custard fridge cheesecake? Making a cheesecake with Ultramel custard is far easier than you might think.
What you need for the base:
- 1 packet of Tennis Biscuits
- 75g of melted butter
What you need for the filling:
- 250ml of Ultramel custard
- 500g cream cheese
- 2 egg yolks
- 250ml whipped cream
- 10g gelatine
- 100g of castor sugar
- 1 teaspoon vanilla essence
- 1 tablespoon cocoa powder
What to do:
- Crush the Tennis Biscuits and mix them with the melted butter.
- Press the butter and biscuit mixture into a baking tray to form the crust of your cheesecake.
- Soak the gelatine sheets or pieces in 50ml of hot water.
- In a bowl, beat the cream cheese, castor sugar, vanilla essence, and egg yolks until they form a smooth consistency.
- Slowly and steadily add the Ultramel custard and gelatine liquid to the mixture while stirring continuously. Both mixtures need to be thoroughly mixed into each other.
- Fold the cream into the mixture gently.
- Now pour the filling over the biscuit base and place it into the fridge to set. It should be ready to serve in about 4 to 5 hours.
All that’s left to do is invite a few people over to help you gobble it up and enjoy!
