Gourmet Boerewors Rolls Recipe

Most people think that a recipe with the word “gourmet” in the title immediately signifies a complex recipe jam-packed with almost-impossible cooking techniques or a shopping list that looks like it comes from out of this world. That’s just not true when it comes to converting the traditional SA boerie into a gourmet treat. Creating gourmet boerewors rolls won’t be particularly difficult… in fact; it will be a whole lot of fun. Don’t take our word for it though – rather see for yourself. Without much further ado, let’s jump right into making an undeniably delectable boerewors roll treat.   

 

What you need for filling:

• 600g of boerewors (fried or braai’d to perfection)
• 2 thinly sliced onions
• 2 tablespoons of Maple Syrup
• Mushrooms
• 1 – 3 slices or chunks of blue cheese (as much or little as you want)
• 1 handful of fresh basil
• 1 handful of fresh coriander
• 6 ultra-fresh bread rolls (buttered)
• Mustard
• Grated cheese (cheddar or gouda)
• 3 tablespoons of oil

 

What you need for the tomato relish:

• 350g of vine or mini tomatoes
• 1 garlic grated garlic clove
• 1 tablespoon of oil
• ½ a teaspoon of paprika
• 1 disc wheel of feta cheese

 

What you need to do:

• The first step is to cook the boerewors. You can do this by pan frying it or popping it onto the braai. Another option is to grill it in the oven. If you want to give the boerewors a bit of a sweeter taste, baste some chutney onto it before cooking it.
• In a pan, fry the thin onion rings in the oil until they are darkening, but be careful not to burn them. They should just be browning.
• Add the Maple Syrup to the onions to caramelize them. Add a pinch of salt to taste.
• Remove the caramelized onion from the pan and keep them to one side. They will be placed onto the bread rolls, so try to keep them warm while they are waiting.
• Add the mushrooms to the pan and lightly fry them with some oil and a pinch of salt. When they are almost done (starting to brown a little), add the blue cheese slices or chunks and allow it to melt into the mushrooms. When you are happy that you have cheesy mushrooms, remove them from the heat and set them to one side. Try to keep them warm.
• In a saucepan, add the oil and fry the tomatoes. You can cut the tomatoes into chunks before frying. The idea is to get the tomatoes to cook into a soft juice, so low heat is required for this.
• As the tomatoes start to soften and become juicy, add the grated garlic and paprika. Do not add the garlic too soon as it will just burn and stick to the saucepan. Place the lid on the saucepan and allow the contents to gently bubble.
• When the tomatoes are completely soft and sauce-like, add the feta cheese and let it melt only slightly. The idea is to create an oozy cheesy tomato relish.  Remove from the heat and set to one side.

 

Prepping the rolls and serving:

The time for building the yummiest boerewors roll ever is now! Your boerie rolls are almost ready to munch! Now you just need to put them together!  Here’s what to do:

• Smear a generous helping of mustard onto the inside of the fresh rolls.
• Layer the bottom of each roll with caramelized onions.
• Shove a piece of boerewors into each bread roll – it should slightly melt the butter or marge on the roll.
• Now, top the boerie with the cheesy mushrooms.
• Spoon a generous amount of tomato relish onto each sausage and top with some coriander and basil.

The only thing that is left to do is to take a big bite and enjoy!
