How to make South African dessert: peppermint crisp ice cream sandwiches

The first question most people ask when tasting an ice cream sandwich for the first time is, “how did you make that?” It’s more a statement than a question because, really, it’s just that good. When you sink your teeth into an ice cream sandwich, it’s hard to believe that whipping them up is so quick, easy, and downright simple. Of course, you’re not expected to tell your guests that – let them think it took you all day if you like (wink)! Here’s a quick rundown of how to make a batch of your own ice cream sandwiches.

What you need:

• 200 g of Tennis biscuits
• 360 g tin of Caramel
• 4 L of mint ice cream
• 2 x slabs of Peppermint Crisp chocolate (150 g each)
• 200 ml of Caramel Crunch Sauce (get this at Woolworths – this is optional)

 

What to do:

Before you get started, it’s a good idea to let the ice cream stand outside the fridge to soften as you will be spreading it over biscuits. Let’s jump right into the instructions!

• Grab a sizey baking tray and line it with baking paper – the ideal size tray for this is 20cm x 20cm.
• Place a layer of tennis biscuits on the bottom of the tray.
• Now, pour the Caramel Treat (from the tin) on top and spread it to create a layer. Make it nice and thick for that “hmm hmm hmm” melt in your mouth feeling.
• Spread the mint flavoured ice cream over the caramel layer – again, don’t be stingy; make it nice and thick.
• Place another layer of Tennis biscuits on the top and then pat down very gently.
• Now, place the entire tray into the freezer and leave it there overnight (no sneaking a few licks or bites!).
• The next day, get your sharpest knife and cut the dessert into neat squares. Keep the squares fairly small so that guests can help them to portion sizes that best suit their diets (and desires!)
• Place the two peppermint crisp slabs into a plastic bag and crush them into little pieces. If you prefer, you can grate the slabs using your cheese grater.
• Just before you serve the ice cream sandwiches, dip them into the crushed peppermint crisp slabs and then drizzle them with the Caramel Crunch Sauce. You can use any dessert sauce as an alternative.

This recipe provides nine generous servings of peppermint crisp ice cream sandwiches.
