Let’s talk about cookies; Hertzoggies, to be exact! You have probably gobbled down a Hertzoggie before and never really given much thought to its history. For those who don’t know, a Hertzoggie is a tartlet that was created by Cape Malay women in the country, when Prime Minister Hertzog promised women the right to vote and people of colour equal rights too. Obviously, the cookie or tartlet is named in honour of the old Prime Minister and what he was willing to do for all the people of South Africa. A new version of the Cape Malay Hertzoggies recipe came out a few years later when it was blatantly clear that Hertzog would only follow through on one of his promises. It was called the “tweegevrietjie” or “two-faced cake” – a way for the people to speak out against Hertzog without having to actually say anything (certainly safer in those times).

In short, the Hertzoggie is not just a sweet treat that’s popular in South Africa. It’s a delectable treat with a deeply ingrained, and somewhat forgotten history in the country. A Hertzoggie is a spiced biscuit cup topped up with apricot jam and desiccated coconut. Yum! Cape Malay Hertzoggies Recipe

Making Hertzoggies is a lot easier than making most cookies and tartlets. The easiest Hertzoggies recipe with self raising flour is quick and easy to make, even if you have absolutely zero baking skills or experience. Be prepared to want to gobble them up immediately! Let’s roll up our sleeves and jump right into making one of the tastiest treats you’ll have this season!

 

What you need for the pastry:

• 2 cups of self-raising flour
• 1 teaspoon of baking powder
• 150g of castor sugar
• 1 pinch of salt
• 1 pinch of nutmeg
• 1/2 a cup of butter cut into cubes
• 3 egg yolks
• 1 tablespoon of cold water

 

What you need for the filling:

• 3 large egg whites
• 1 cup of castor sugar
• 1/2 teaspoon of vanilla essence
• 2 cups of desiccated coconut
• 1/2 cup of apricot jam

 

What to do:

• First, preheat the oven to 180 degrees Celsius.
• While the oven is heating, grease a muffin baking tray (a mini tray is the best). The tray will help to form the cups of the Hertzoggies.
• In a large mixing bowl, sift the baking powder, nutmeg, salt, and flour together and then mix the ingredients around.
• Drop the cubed butter into the bowl along with the castor sugar and then massage into the flour mix, until it starts forming fine crumbs. When it is crumbly, you can move onto the next step.
• Now, add the eggs to the bowl and mix in.
• Add some water (just a little) to help bring the dough together.
• Take the dough out of the bowl and place it onto a smooth, clean surface.
• Knead the dough a few times and then roll it into a ball. Return the dough ball to the bowl and cover it with a plate or kitchen towel. Leave it to rest for 20 minutes.
• While the dough is resting, whisk the egg whites in a separate bowl until they form soft peaks. As the egg white start to peaks, add the vanilla essence and sugar slowly. This will make the peaks become firmer and glossy in appearance.
• Very carefully fold in the desiccated coconut and set it to one side.
• Grab your dough mix and press it carefully into each cup on the muffin tray. Make sure to create at least a 5mm thick base.
• Now, add about 2 teaspoons of apricot jam into the pastry cups and using a teaspoon, spoon the meringue mixture on top.
• Place the muffin tray into the oven and bake for approximate 25 minutes or until the meringue tops are golden and crispy.
• Remove the muffin tray from the oven and allow the Hertzoggies to cool a little before putting them out on a cooling rack.

These are best served with a steaming cup of English tea. Beware though, it’s difficult to have just one! Make a double batch, just to make sure you don’t run out too soon.
